I'm a big potato fan. I like them however you make them. Baked, fried, roasted, mashed... I think everybody does, right? I have yet to run into a potato-hater. They also have a reputation for not being hard to make. How hard is it to bake or roast potatoes? Well, although a potato will most always taste good - even if you're a lousy cook - once you make a perfect potato, once your dinner guests gasp and are in awe of the texture and taste of your potatoes, you will notice the difference.
Some of you might have already stumbled onto this Ina Garten (Barefoot Contessa) Dill Fingerling Potato recipe, but if you haven't you simply MUST try it now. They are perfectly tender, with perfectly crunchy skin, perfectly roasted and perfectly buttery (I use Earth Balance buttery spread as we are vegan). The secret to their success I think lies in the fact that they are roasted in the Dutch oven or a large heavy bottomed pot with a lid, on the stove, as opposed in the oven. Keeps them from drying out.
This is the most easy recipe in the world, and so delicious. Do try it!

I tried it for lunch yesterday, and how tasty, thank you! Then, for dinner I added the cold leftovers to two lettuces, one bitter, and what success - though I had no dill, and had made the potatoes with basil.
